Flaky Pumpkin Brioche

I love everything about fall -the weather, the flavors, the holidays. Everything pumpkin spice... I tried this recipe with my mom two years ago and we definitely fell in love with it. Make the most of the season with this delicious, flaky pumpkin brioche that will warm your heart.



Get ready for a festive fall treat, this Pumpkin Brioche is simply delectable. 


Ingredients

  • 2 eggs

  • 1 egg yolk

  • 240g pumpkin purée

  • 200g brown sugar

  • 3 tsp water

  • 400g all-purpose flour

  • 1 tsp instant yeast

  • 1 tsp cinnamon

  • 1/2 tsp nutmeg

  • 60g butter (room temperature)


Directions

  1. In the bowl of an electric mixer fitted with the dough hook attachment, mix the flour, brown sugar, yeast, nutmeg and cinnamon on low speed until it begins to come together, about 2 minutes.

  2. Scrape the bowl well, and add pumpkin purée. Keep mixing.

  3. Add butter and water. Keep mixing on low speed for about 2 minutes.

  4. Once it begins to come together, with the mixer running, add the two eggs one by one.

  5. Raise the speed to medium and mix for about 10 minutes more.

  6. The dough should be very smooth and it may appear very sticky (that’s OK!).

  7. Cover the bowl with a wrap. Let the dough rise in a warm place for 45 minutes.

  8. Swift some flour on the kitchen island where you'll be transferring the dough. Gently give the dough the shape of a roll so that you can easily divide them into pieces. (Don't add flour! The dough should be sticky but, consistent enough that you can give shape to it.)

  9. Lightly grease a 9-by-4-inch loaf pan with nonstick spray/ butter. Divide the dough into 10 even pieces and then roll each into a ball on your hand.

  10. Transfer the dough balls to the prepared pan.

  11. Cover with greased plastic wrap and let the dough rise in a warm place for another 30 minutes.

  12. Toward the end of the rise time, preheat the oven to 375°F. Remove the plastic wrap and brush the egg wash over the surface of the loaf. If using the sugar, sprinkle it evenly over the surface at this time.

  13. Bake for 30 minutes until the loaf is brown.

  14. Cool the loaf in the pan for 10 minutes, then unfold it onto a rack to cool completely before serving.
