This delicious healthy granola recipe is naturally sweetened with cherries, cacao nibs and apple sauce. It’s made with oats, olive oil and your favourite nuts. Recipe yields about 8 cups of granola, enough for about 16 half-cup servings.
Perfect, healthy, crispy breakfast does exist!
Ingredients
50g olive oil
100g unsweetened apple sauce
60g no sugar added organic peanut butter
100ml milk
15g chia seeds
450g old-fashioned rolled oats
180g raw unsalted almond
120g raw hazelnut
30g cacao nibs
60g unsweetened dried cherries
Directions
Preheat oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
In a large mixing bowl, combine the oats, nuts, and chia seeds. Stir to blend.
Pour in the oil, milk, peanut butter and apple sauce. Mix well, until every oat and nut is lightly coated. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.
Bake until lightly golden, about 25-30 minutes, stirring in every 10 minutes (for extra-clumpy granola, press the stirred granola down with your spatula to create a more even layer). The granola will further crisp up as it cools.
Turn off the oven, and keep it open. Let the granola sit for about 10 minutes.
Once the granola is cooled off, add cacao nibs and dried cherries. Stir to blend.
Voilà! Enjoy your very own healthy, crunchy granola for up to 2 weeks.
