Let's take a trip to the gorgeous sunny Mediterranean coast....
So easy and wholesome, and vegan too!
Ingredients
1 cup Quinoa
2 cups Water
1 cup Parsley
1 cup Dill
1 cup Green Onion
1/2 cup Mint Leaves
1 Onion
1 tablespoon Tomato Paste
1 tablespoon Red Pepper Paste
1/2 cup Cranberries
1/2 cup Walnuts
1 Lemon
Olive Oil
Salt
Pepper
Directions
Combine the quinoa and water in a medium pot. Bring to a boil, cover, and reduce the heat. Simmer for 15 minutes.
Remove the pot from the heat and let it sit, covered, for 10 minutes more.
Heat a medium saucepan over medium-high. Swirl in 2 tablespoons oil. Add chopped onion; season with salt and pepper. Cook, stirring occasionally, until onion is translucent, 3 to 4 minutes. Add in tomato and red pepper paste as well, mix them slowly. Take the mixture off the heat and let it cool to warm room temperature, 15 minutes.
Meanwhile, in a large bowl combine chopped parsley, dill, green onion, mint leaves, and lemon juice. Season with salt and pepper.
Transfer onion mixture and the fluffy quinoa to the large bowl.
To serve, spoon the delicious quinoa salad onto plates and top with cranberries and chopped walnuts. Drizzle with some dressing from bottom of bowl, if desired.
